Resumen

O artigo faz revisão sobre as fibras alimentares. Apresenta a definição e os principais componentes das fibras da dieta. Analisa as expressões “fibra bruta” e “fibras alimentares”. Mostra a classificação das fibras da dieta quanto à solubilidade de seus componentes em água e resume os efeitos fisiológicos das fibras solúveis e insolúveis. Apresenta as principais fontes de fibras alimentares e destaca o papel desse nutriente na proteção, manutenção e recuperação da saúde humana.
