ASPECTS OF BEAN (PHASEOLUS VULGARIS L.) PROTEINS

Abstract

Beans are a good source of carbohydrates, proteins and other nutrients. They contribute to improve the protein value of diets because of the high protein content of these seeds and the complementarity of its amino-acid composition related to that of cereal proteins. Cereal-legume based diets are eaten by several people, specially those from Latin America. Beans proteins, however, have nutritional limitations. Aspects related to the nutritive value of these proteins are briefly reviewed.
